Various projectiles can be reflected, those from enemies, bosses and those launched by stationary environmental traps which cannot be attacked.
To reflect a projectile; click the guard/parry button, R2 on default control scheme, as the projectile approaches your character. Visually it appears that the projectile is about the hit the character on the head. I find it easier to run at the projectiles and hit the parry button just I am about to collide with the projectile. You can obtain upgrades and a keepsake to lengthen the parry window and equip Fernando's upgrades; if it proves too difficult by default.

To farm: Clear all the enemies in a room, except one that launches projectiles. A stationary enemy which can be found on any level, including the 1st one. Stand in front of it and simply reflect the projectile like the video below.
