Like the achievement for having a combined light strength of 3000 lumens, I was not able to achieve this one until the final tier of boat upgrades, with all possible engine slots unlocked.
This allows you to have a 8x2 section of space for engines, at which point you are able to place two "Twin Prop Engine"s side by side. Each of these have a 36.8kn speed so combined it should push you to 73.6kn. After this there will still be two squares left of engine space allowing you to fill out the final bit of speed with whatever other engines you might have.
I unlocked this by having two of the "Twin Prop Engine"s and one "Jet Drive Engine". Researching the bigger engines will also allow you to reach this sooner and with less engines bought, but at the time of unlocking I had focused on the rods so hadn't unlocked any yet.
I have also attached an image of how my boat looked at the time of unlocking (and also showing what I had for the lights and rod achievements too).

Thanks @MisterPeacher. I managed to get it without the final engine upgrade, using a combination of x4 Jet Drive engines and x2 Improved Outboard engines (8 engine slots total).

Dependent on how many spaces you have available for Engines in your cargo hold, and the equipment you have unlocked through research or the Arterial Engine from the Blackstone Isle DLC, you can combine a series of equipment to reach the number you need. Any combination of the below Engine equipment totaling 75kn or above will garner you this trophy.
