Great solution, worked for me. I used my alt profile on a second Xbox so managed this without a boosting buddy.
Although it only takes about 3min15sec to complete the actual race all of the track selection, bike selection, loading screens, waiting to start, results and quitting back to lobby add on a fair chunk of time. Each race was taking about six and a half to seven minutes to complete so 20 races takes about 2 hours.

The achievement tracker doesn't show the number of races you've completed. To check how many you have you can go into the game under "my rider" then "titles". You will see a tracker there.
This achievement seems to be buggy, but after some trial and error I think I figured it out.
In order for the race to count as "completed" you need to race with a full grid of 12 bikes. However, AI bikes count so you can fill out the grid with them. I do believe you will need at least 2 human players though. You can make the race private or public doesn't matter as long as there are 12 bikes.
It would be great if someone else can confirm.

This achievement is glitched; there are certain hidden requirements you have to fulfill in order for your race to consistently count. As the other solutions stated, you must have a full lobby (make sure bots are enabled), and on top of that, you have to place well in the race. You can track your progress under My Rider -> Titles.
I played with someone who was very good at the game and I always ended up finishing the race near the bottom with around 10-20 seconds left on the clock; almost none of those races counted for me despite me finishing each race (not getting disqualified). I believe you must place in the first half of the race (top 6) for your progress to consistently count (my partner also tested finishing near the bottom and his progress didn't track either); just be sure you're racing with difficulty settings you're comfortable with and both yourself and your partner can get the achievement in 20 races :)

This still may not track in the in-game tracker though. What I found to get this working again was the following:
Set up a public or private race (I chose A class) as myself and my fellow boost partner are not great at bike games and fell off our bike often, and we took turns to ‘win’ rather than ‘complete’ in the Sierra Nevada - Club Circuit as this is the shortest track in the game.
I had the following conditions:
Class: A
Physics: Standard
Transmission: Not Important
Laps: 3
Track Selection: Host
AI Difficulty: Very Easy **IMPORTANT TO HAVE THIS SET TO ANYTHING EXCEPT NO AI**
Private Match: Private
It’s easy to alternate wins from these settings.
