How to unlock the Endless Day achievement in Dungeon of the Endless - Definitive Guide
This achievement must be obtained on 1/21, which means you have two ways to go about it. You can wait until January 21st, or you can re-set the time on your Xbox One. To change the date, unhook your One from the internet then do a hard re-set (hold the power button down for ten seconds). You should now be able to go into Settings and change the date. I don't know that the year matters, but I chose 1/21/2017.
You will have a new character available who has some pretty nice skills, so you might not want to leave this for last like I did. If you keep him alive for three floors and/or finish the game with him, he will become permanently unlocked like your others. I don't think it matters which pod you use, but I stuck with the Escape Pod on Too Easy.
One thing to be aware of - the description of this achievement is a bit deceiving. You don't have to just "play" on 1/21; you must win a game, so instead of the two minutes I was expecting, it was closer to two hours. Also, the achievement didn't fire when I finished the game. It was not until I went back online, turned my Xbox off and on, then opened the game again that I received the achievement, so it's a bit buggy.

I've just won a game and the special character Esseb Tarosh died during the run - no achievement.

Don't Xbox ONE achievements only unlock when connected to the internet?
So it wouldn't pop until you're back online, so I don't think that counts as buggy.
Thanks for clarification on needing to beat the game, because I tried this method a few weeks back and it didn't pop after a few floors so just assumed I HAD to wait until the actual Jan 21st.

First, you need to unlock Esseb Tarosh, who becomes available 12am CET January 21. Play through and win a game with him by 12am CET January 26. You get to keep the character after unlocking him!

I tried this a few times before I got it to work so hopefully this guide helps someone else.
I played this on an original Xbox One on 9/8/2023. I went into settings and told it to forget my wireless network then hard reset the Xbox (held the power button down for 5+ seconds). Turned Xbox back on and went into setting and changed the date to 1/22/17 (I tried 1/21/23 and 1/21/21, and it didn’t work). I stayed offline and opened the game, chose Ken Massoqui and Esseb Tarosh on Escape Pod on Too Easy difficulty.
I played the whole game in one sitting. If I had to walk away, I left the game on and didn’t quit out. I made sure to keep everyone alive. During the game I recruited two more people (Kreyang and Elise). Once I finished the game (completed floor 12), I reviewed the stat screens and then quit out of the game and went back to settings and reconnected to my wireless network.
Once Xbox live was connected, I opened the game back up. During the loading of the game, Xbox said it had two sets of data for my game: one from 1/22/17 and one from 9/8/23. I selected 1/22/17, nervously. I looked at my stats which seemed to be intact and saw that the Endless Day achievement had silently popped. :)
