When a monster is furious, an icon of anger appears on the monster's head. The game also notifies you of this via its Notification system. Once a monster is angry, it will refuse to work (if it's a workable monster) and generally stand around moping. To get this trophy, simply pick up the monster and toss it back into the Dungeon Portal. You can get this trophy easily by making sure there are no amenities to keep your monsters happy. For the Horde, don't build brewery, treasure and arena rooms for them. For the Demons (via Skirmish or Online maps) don't build torture and admiration chambers. Soon enough your monsters will get angry. See below for an example of the angry icon (the picture was taken by myself):
