Simple enough. Don't recruit any Horde or Demons.
Ghost heroes count as Undead - so you can do this and knock out the "get 5 Ghost Heroes" achievement on this map in one go.
You CAN use Thalya and still get the achievement.

Undead are so much easier to manage than horde or demons. No need for food, just make sure you're graveyard is big enough! Keep upgrading the undead side of research when possible and don't forget to get the first few of each of the other research for the extra recruitment slot.

I can't confirm yet but, I think you can't use Thalya as well. There was one before that to just use one class as well and I've had to redo because I used Thalya and the Prince of Hell summoning so, just to make sure, don't use those!
