Fastest way to do this after finishing everything else is to start a new story mode and you'll be put into a first to 11 game.
Just keep on losing and restarting with
at the end screen.
You can basically idle this by just coming back to start the matches between games, but actively holding your controller can make it much faster.
Just constantly switch between your characters and sprint to the right. This will allow the enemy to keep picking up the ball and dunking until they win.

Using two controllers helps for this, you don't even have to move from the start. Just press A to start each match. The AI will run back and grab the ball as soon as the invincibility goes down, score and repeat.
