How to unlock the Can't Touch This achievement in Dying Light - Definitive Guide
I didn't even know this was an achievement, I was just trying to clear the area to open the police vans without being attacked.

If you have been looting and have alcohol and strings, create the molotovs. Throw a fire cracker around the group, get as many huddled as you can and toss in the molotov.
I was able to go from 0-20 in two groups.
The two groups I found were straight ahead from the safe house exit and to the right of the exit in the alleyway by the broken fence.
Got in a car and ran Zombies over. Very easy and quick but obviously you need the DLC.

Although it sounds like a decent challenge, if done properly, this trophy is very easy to acquire. Do not try to complete this with melee attacks, because you will fail. The simplest way to earn this is by finding a heavily populated area of basic zombies, preferably where they are grouped up in several packs of 5 or more. (If you are having trouble finding such a place, I recommend checking your map for unsecured Safe Zones, designated by a red house icon).
For this method, you'll be using Molotovs. You'll earn the blueprint needed to craft these upon completing the first main mission from Spike, very early on in the story. After which, you should have the necessary supplies ( 1 Alcohol, 1 String ) to craft them. (If not, you will find these frequently from everyday scavenging). Each crafting will yield 3 Molotovs. I recommend crafting 2-3 sets, arming you with 6-9 Molotovs. This will allow you some leeway in case you can't find large groups, or have trouble hitting them.
Finally, simply toss a Molotov (select them by cycling , press to throw) into the center of a zombie pack, or by attracting many zombies nearby, and throwing one in their path to you. All zombies hit will burst into flames, and any zombie who touches the flames will burn as well. Just keep enough distance so you are not accidentally hit by a charging zombie, or take any splash damage from your own Molotov. 4-5 throws should be more than enough to down 20 enemies. You can also use Throwing Stars to quickly pick off single stray zombies from afar without the need to waste a whole Molotov.

The one in Jaffar's safe zone is excellent for this.
This achievement can be difficult if just using melee weapons and hoping to unlock this naturally. The best way to do this is with the use of guns, since it keeps zombies at a distance and eliminates the possibility of them melee attacking you. It'll just be important, at that point, to keep an eye out for special zombies, such as Spitters, that can hit you from a distance and ruin your streak.
One of the most reliable ways to get this achievement is during the gun challenges. You are given a gun with plenty of ammo, and you're practically unstoppable in many of these challenges. Simply mow down zombies with your gun and you shouldn't have any issues killing 20 in a row without them getting close to you, as long as you make good use of your gun. The video below, courtesy of PowerPyx, shows this being done.
The best way to earn this trophy is to go to the infamy bridge, located at the far right of the slums map. There are many zombies here and you can sit on top of a car and just shoot the zombies with any type of gun. If you do not have a gun, do not worry. Once you've reach Old Town you will have lots of guns, and an infinite supply of ammo at the vendors. Any gun will work, so simply kill 20 zombies without taking any damage and the trophy will unlock. Using grenades do not count so bear that in mind. Also, be absolutely sure to earn Harran Shooting Club in the process as well.
Alternatively, the story mission "The Museum" is a GREAT place to earn this trophy. Not only will you have a gun (as it's required towards the mission), but there's an area near the end of the level where you have to reach the other side of the museum. You will know what area we're referring to, as you'll see hundreds of zombies in the middle. You're also on the second floor so it's impossible to take damage. Headshot zombies to get this faster.
