Easily done by going to Dynasty picking Ohio St and simming to bowl games. This may take multiple sims depending on RNG

The Heisman Trophy award goes to the best player in the country at the end of the regular season.
This trophy can only be unlocked in the Dynasty Mode (offline or online).
-If you plan on playing most or all of the games, one of your players will likely come away with this award. This will be the most time consuming but if you aren't strictly playing to Platinum as quickly as possible it's a fun way to earn the trophy. There's a Heisman Watch section in your Dynasty menu to see your progress throughout the year.
-If you plan on simulating most of your games, you'll want to play as a top ranked school. A top ranked school will naturally have top ranked players so it's possible one of your players gets the Heisman Trophy. The simulation isn't perfect though and sometimes will award the Heisman to players on more obscure teams or for positions not typically seen as a Heisman canidate, so it may not be a bad idea to play a few of the games.
-The easy path is playing an Online Dynasty with a TeamBuilder team (you can't play as a TeamBuilder team offline). You can set your Dynasty settings to only have one human user despite being online. I created a team where every player has a 99 in all 53 stat categories and the team is a 99 OVR. Search for the team "Platinum Trophies" by keyword or by username, Kraigbot. With this super team you should be easily be able to sim to the end of Week 15 and you are almost guaranteed the Heisman Trophy with so many players with maxed stats.
-Another sure fire method is sim to the Week 15 in an offline dynasty. Once there, go the Heisman Watch to see who the top players in the running for the Heisman. Create a new character/head coach for each team that has a player on the shortlist of the Heisman Watch. Sim to the following week and see what player wins it. Switch to that coach/team and trophy will unlock.

Go to Dynasty. Select offline Dynasty and use active roster. Under Dynasty settings switch game times to 1 minute. Select any team and then head coach. Advance week to week 15. Tab over with rb to the CFB tab and select Heisman Watch. Note the 5 teams here. Now tab over to Dynasty Central. Select Members. Push Y to create new character. Add a new head coach for each of these teams or at least the top 3. Switch back to your original coach using Members again and select your original team and Switch to this Character. Advance Week to Bowl games. See which player won the heisman and go back to Members and switch to that team. Achievement should pop upon switching.
