I used Arkansas and played against Kent State (one of if not the worst teams). Put the difficulty on Freshman. Run the play 01 Trap. This play worked for me 90% of the time. You're going to be faster than the defense so you can outrun them and out angle them.
Important: YOU CAN NOT SUPER SIM before earning this. I tried this first by super siming defense and then playing offense. It didn't work. I tried it again playing defense and then offense. The achievement popped when I scored.

I didn’t do it with 2 controllers. The team is so bad that it didn’t matter.
