How to unlock the Rock Out With Your Knockout achievement in EA SPORTS MMA - Definitive Guide
This can be done with 2 controllers.
Best thing to do take the opponent down with a takedown and pound them out there. If you decide to keep it standing when you rock your opponent, dont jump on them when they are down. That would be considered a TKO. Let them up and rock them again, once you do this 3-4 times the next time you knock them down it should knock them clean out.
Hope this helps.

For a fighter that will definitely help you in this fight, I recommend playing as Fedor Emelianenko. Try to aim for the other guy's head a lot because it can make them weak more easily than other attacks. If you get a good hit it should be a knockout, if it's not a knock out then wait for the other guy to get back up and continue to punch him again. Fedor Emelianenko has a one hit knockout so almost always an open shot to the head will result in a knockout. I recommend you fight against Bobby Lashley, he has a weak stand up which makes him more susceptable to a knock out punch.

A knockout can be accomplished in two ways:
1) Hit the enemy with an accurate blow to the head, choosing the right moment. The right moment refers to the period of time when the opponent delivers one of the “powerful” strikes, such as a knee strike or a “hook”, and is open for only a few fractions of seconds. And if you can hit your opponent at exactly this time, then most likely he will be knocked out.
2) You need to hit the enemy and after he is knocked down, do not finish him off, but step aside. After four such knockdowns, the opponent will immediately be knocked out the fifth time.
