How to unlock the I Got This achievement in EA SPORTS UFC 2 - Definitive Guide
This is missable!
When you're fighting your way up the ranks, you'll be presented with a short fight notice fight. The number of training sessions will be 1, represented by a single fist. Accept it!
Win this fight, and you'll be granted with this achievement. You can set the difficulty to beginner and it will still work. If you skip the fight with only 1 training session, you may not get another. Pick the fight that has only 1 training session, represented by a single fist.
I went through my whole career and missed this.It comes fairly early: about 3 fights after you start fighting in the arenas (after the local bouts).

Apparently it's possible for the short-notice fight opportunity to not show up at all during the career. That would explain why I never saw it during my first career, which was Light Heavyweight.
If you do miss it or it doesn't show up, start a new fighter and be on the lookout for a fight with 1 training session. Pick it, win. Comments below state it could take multiple careers for one to show up.

I hate this achievement so much! It's so random, I ve already played so many hours on multiple characters and still no luck...

I may have found a solution to this achievement if you start a new character I'm not sure if imported works but what I did was finish the ultimate fighter then I lost a round won 2 then lost and won and my next fight was the single training fight
I believe all you have to do is allow yourself to lose if you win excessively it never pops up but if you make the codeing of the game see you are struggling it gives it to you

I can confirm following that kind of win loss pattern works eventually you’re offered a short notice fight that you accept then choose the training camp with one fist only.

During your career when returning to the gym and selecting your next opponent you may be offered the opportunity to take a short notice fight but this appears to be a random message that will not appear in every career. When you receive the message there will be 1 fight that only has 1 or 2 glove(s) next to it signifying a shortened fight camp. Make sure you select that opponent for your next fight. The trophy will unlock when you complete the fight (see the following image for a look at what a short notice fight offer looks like):
Tip: In the early part of your career, always choose the lowest ranked fighter so you go up the rankings slowly as it doesn't appear that you will get a short notice fight if you are the champion.
