During Career mode you will have multiple fights where you will receive three challenges to complete during that fight. My fight was against Donald Cerrone and my challenges where to.
Not allow him to land any more than 10 kicks to the body and head.
Land 5 kicks of my own to his body and head.
Give Cerrone a submission loss.
If you didn't complete the challenges, you can restart the fight. Some fights have harder challenges and you do come across a few in career mode so you can attempt it several times.

i have to do this against rampage jackson, one of my challenges is chop at his legs till damaged. kinda hard to do when he made me waste a half a round on the ground

In Career mode when you make it into the UFC proper and start fighting against some of the high ranked fighters you will be given 3 challenges to complete in the fight e.g. Win by decision or land 50 head and body strikes. You need to complete all 3 challenges in the same fight to unlock the trophy. The trophy is missable as you will only get a few fights with challenges in them so if you don't complete all the objectives in one of them, then you will need to start a new career.
Tips:
You can check if you have completed certain objectives by pressing
and seeing if the objective is ticked. You will get fights with challenges even if you hold the Championship belt (we deliberately lost our titles because in the first few fights no challenges appeared but after obtaining the trophy and regaining our belts, we got further title fights with challenges).
