This trophy can be obtained in the 2 player Knockout mode. I used Connor McGregor to get 3 trophies in one quick fight.

You will probably unlock this naturally through playing the game. If not use fight now mode and select the created fighters. Use hard punches away from your opponent + / for uppercuts and spinning kicks/head kicks to KO your opponent quickly. Alternatively you can use KO mode and reduce the head health of your opponent.

Go to the knockout mode, set the minimum HP to the participant, and hit first. The trophy is yours
