How to unlock the Work Ethic achievement in EA SPORTS UFC 2 - Definitive Guide
There's 11 challenges each have three difficulties (easy, medium and hard). To get this achievement you need to complete all 33 with an A Rank. Here are some tips for the harder challenges.
Defense Tactics - Holding or and pressing ,, or will parry the strikes and gain you the most score and time.
Heavy Bag Hands & Legs - Keep your stamina high to land strikes with power, and vary your strikes between jabs, hooks, uppercuts and elbows.
Clinch Control - Keep your stamina high to transition quicker, land the odd strike to gain time and score.
Takedown Offense - Get two clinch takedowns to earn 150 score each and two normal takedowns to reach 500.
Submission Offense - Probably the hardest skill challenge, the AI seems to try to escape in the same pattern (,,, and the same timing, so you kind of need to get used to the pattern and block before they move rather than blocking as they change direction.

Submission offense requires a bit of luck, for sure. You have to stay ahead of the AI gates, which means you'll have to guess on the timing.
Also, the bug where you get negative reinforcement from your trainer on successful low kicks on the heavy bag is annoying.

I certainly think defensive tactics hard is the hardest of them all by far. I just literally cannot seem to fathom it.

For the submission offense i used a little trick.
Start the submission move and when the mini game starts, pause the game, you should have the time to see where non to push the stick, hold the right stick in the right direction and return the game, wait less than a second and pause again, to see where to move the stick.
Repeat pause-resume until you get it.
I think that's the easiest way to do it.
EDIT: this trick can help you with "quick strike" challenge too, if you have slow reflex, when the command pop up, pause and prepare yourself, resume and do it!

Basically the only two skill challenges that will give you trouble are the Submission Offense on Hard and the Punching Bag on Hard.
The Heavy bag is just about using your stamina and the right punches. Start with Jabs and Straights for the first half (while keeping stamina up) then switch to uppercuts, might take a few tries.
The trick for the Submission Offense is when you initiate a submission pause the game repeatedly so you can see where you need to push the joystick next kinda cheesy but will save you potential hours of frustration.
