Easily done at the first Shrine in the first level. At shrines you can upgrade your abilities and go into Training mode, which lets you work on your combat skills. Walk up to the first enemy and press X to begin. As the enemy (a small imp) remains stationary, it will throw projectiles at you which you can counter with LT just before they hit you. Do this three times and the achievement will pop. 👍
