They are very easy, usually fighting the generic monsters in the area.

You will find Hunting Boards in most towns and some camps out in the fields. These will provide quests to kill basic monsters for small amounts of experience and money. Two will be available from the first town of Inel Harbor. Kill the required number of enemies, then return to the Hunting Board to turn in the quest and unlock the achievement.
