The assists seem to be time-limited. You cannot just pass to the striker, let him run and shoot, like Fantasy Premier League. 
It seemed to only count when the attacker shot after shooting the first time, or taking a touch. The easiest way is two controllers, and have the assister take the ball into the box, pass to a teammate and shoot with

Cant seem to get it to pop, anyone else having issues? Have been trying for the better part of 2 hours lol. Ive clearly assisted as I can do the assist celebration at the end...
