From the main menu, go to:
Kick Off -> Local Match.
Choose any 5-star team (for example, Bayern Munich, FC Barcelona, Liverpool R) for your team and any 1-2 star team for your opposition (for example, Waasland-Beveren in the Juliper Pro League).
On the Pre-Match screen, go to the General Settings menu, select a Match Level of Beginner and a Match Time of 5 mins.
This should swing the odds in your favour enough to win with a clean sheet. If they happen to score (a shot on target is extremely unlikely, but you never know), you can just repeat the match until you succeed.

For others a 'clean sheet' is also known as a 'shutout'. Meaning the opponent does not score during the game.
