There are a total of 50 different hero combos. You can see what combos a hero is able to do(as well as which other heroes are needed) by opening the party status tab and clicking "Y" twice. I will list the 20 combos that I used. If you are trying to do this as early as possible, as I was since hero combos dps are broken, then once Marissa and Garoo show up to open up the Eldroad, you should have(or be able to) all the heroes needed.

*To acquire Celia you must run the cooking mini-game in its entirety(17 opponents if i remember correctly), as a bonus gift to all who are struggling with it, use omelet as appetizer and coconut water as desert for every single battle. You will win almost all of them with that alone as for the Mains just choose a dish you know one of your judges loves. You can also find out heroes favorite meal at the divination stall on 1F of castle

The, Pants, Party
Hero Combos are introduced in the first dungeon of the game, and are combo attacks performed with two or more party members, assuming you have the appropriate amount of SP available for each character. You will unlock more automatically throughought the story as new members join, and considering there are 120 party members to collect, that is a lot of combo options, so getting 20 unique ones will certainly not be an issue.
