How to unlock the Eggfoot Race Hero achievement in Eiyuden Chronicle: Hundred Heroes - Definitive Guide
Don't bother starting on this achievement until you can buy Champion Eggs (unlocked via the HQ construction board). It's a waste of your time otherwise, and this side activity is already a huge slog.
Buy as many Champion eggs as you can afford and place them in the stables. Wait 15 mins.
Once they've all hatched, Retire all creatures that are Rank C or D. They're worthless. Keep all B ranks. To start off with , buy the best fruits available (I think it's Super Fruits?) and give them to all of the B ranks for two powerups.
If you didn't obtain any, place more eggs and wait for them to hatch again, and repeat as necessary. If you did obtain at least one B Rank, place more eggs again then race the B rank to hatch the others. You essentially want a healthy collection of B ranks to start with.
When racing this B Rank, feed it Balanced Feed. After you've come first place in the first few ranks, start racing the higher ones. Use your creatures "total points" as the basis for when to race the following ranks;
800 = Rookie 1
1000 = Open 3
1300 = Open 2
1500 = Open 1
1700 = Master 3
2100 = Master 2
2300 = Master 1
2500 = Champion 2
2800 = Champion 1
Once your starting B Rank has ran out of "feed" counts, use the next creature.
Once you have a pair or similar "Total Points" value creatures, breed them. This should give you an A rank. Use another Super Fruit on it as you can only 'carry through' one powerup, but now you'll start earning Supreme Fruits. For future Eggfoots, feed them Supreme Fruits and don't bother with the Super Fruits anymore (you'll have plenty). Race and breed two more "fed out" B rankers and breed them so that you now have two A rankers. Race, feed and breed those two A rankers so that you get an S rank. I think you can see where this is going.
When you've achieved this S rank creature, start considering feeding Speed/Stamina feeds instead at the end of races. I essentially fed my S ranks Speed > Stamina > Stamina > Speed > Balanced > Balanced feeds then bred both S ranks that I fed like this. Essentially you want to create the "ultimate creature" by maxing out the "Total Points" to 3000, with the stats roughly around 500/1000/1000/500 values (so Running/Stamina are 1000). This should happen by the 3rd generation S rank (as there's no rank higher than S in the game, you essentailly want to breed two SSS rank Eggfoots).
Once you have that 3rd gen Eggfoot in your stable, you are able to race and win all of the Legend cups, though a little RNG is involved. So save first, then if your ultimate creature loses a Legend race, just load and try again. One race (the Legend: Big Egg Cup) I had to load a little more than a couple times, but I got there in the end.

As there seems to be a little bit of confusion in the comments, I'll elaborate further.
There are only two things I can think of that would give you trouble:
- If you breed a second or third generation S with a first generation S, giving you a creature with low results. It's been a while but I think the 3rd generation S is where you need to get to in order to reach a stat totalling 3000 points.
- If you're not granting your S rankers two powerups from Supreme Fruits (ie they have 1 or 0 powerups, or one of/both powerups are from Super or Standard fruits). All of the powerups are 'fine' but you might have a preference. I didn't notice a particular silver bullet out of any combination of them.
Winning or losing the race doesn't matter if you've already won that race. You just need to feed it. You could race crappy cups all the way through for this but I wouldn't recommend it just to keep your Supreme Fruits supply up. Once you can't feed the Eggfoot anymore, put them in the breeding queue, it's pointless to make them race the last three times.
Here's a check list if you want to tie the numbered creatures with their names and avoid the mistake in future. The number is based on the order you received it. So B1 and B2 would be you hatching your first two B animals, and A2 is the offspring of your 3rd and 4th B rank animal.
I elaborated on the guide a little more, but I'm not really sure where you're going wrong.

S23 <> S24 = S28 (should be ~1500 points)
S25/S26/S27/S28 should have enough points to start racing from the cup "Open 1" straight away. Race + Feed them until they have 3000 points. Once they reach 3000 points, you have can start racing in the Legend cups, to which you would want to race those last 3 times without feeding for the "win all races" achievement.
Once they're fully raced out, if you still need more Legend cup wins, breed them.
S25 <> S26 = S29
S27 <> S28 = S30
S29 and S30 will still be born with ~1500 points, but it will grant you a few extra attempts at the races.
I know it was less than a month ago but I really can't remember specific details outside of that (like exactly the number range of the Eggfoots I was breeding), but I hope this makes sense.

@DK1 Your 2 fully fed S rank should create another S rank with about 1800-1900 total points. You WILL have to do some races to get them to 3k total points. From there, you will absolutely want to create a save point because the last races can be complete RNG where you either dominate or get wrecked and finish last.

@DK1 Outside of needing to win all the races for the achievement, no, it doesn't matter what your eggfoots place in regards to working towards S rank. Just competing allows you to feed after the race to boost stats.
I'm not sure why you are having different results, but I too messed up and had to create a whole other 2 S rank eggfoots to breed a final S rank. Definitely creating a save point is the biggest time saver.

There are a total of 42 eggfoot races to get 1st place in for this achievement. The first batch will go from 1-5 yellow stars, then a second batch of 1-5 red stars. To win the final batch of 5* races, you'll need an Eggfoot with total stats maxed at 3000 and likely A or S ranks in their "adaptability" for each type of terrain. To get one with stats this high, you need to breed pairs of increasing grades. Start by purchasing a large number of Champion Eggs and hatch them by waiting real time or just running a race with any Eggfoot. You can get a max grade of B from these eggs, and you'll want to pay attention to "terrain adaptability" which shows as a letter grade on the terrain type (desert, lava, and mud). Keep breeding these to get higher ranks on all adaptabilities, then breed those until you get an overall S-Rank Eggfoot with all high rank adaptabilities. This one should win the final rounds of races.
More info on racing and the process to create the "Ultimate" Eggfoot can be found HERE. However, be aware that you don't need an S-Rank on ALL adaptabilities. The races tend to be extremely RNG based, and I've seen videos of people winning the final races with C-Rank adaptabilities. My personal final egg that won the last set of races was an S-Rank eggfoot with an A-Rank in sand and mud, and a B-Rank in lava, so you don't actually need an "Ultimate" eggfoot with all S-Rank adaptabilities to get the achievement, but the higher your ranks, the easier it will be - however, getting higher ranks takes longer, so pick your poison.
