If you're like me and this was the last achievement you needed, then replay challenge BODYGUARD (#4)
It's more luck than anything, as you can't choose the item you get. But if it's the last cheevo you need then most likely you are almost done with this, so you won't need to land too many hits with the pinata.

There’s no quick method however I just kept replaying a cup and tried to hang around the middle of the pack. I was averaging 1 a race and sometimes would get lucky and get the one that has 3, when you do get them, slow down and wait until you can cut someone off and directly get in front of them and quickly release the piñata for a quick strike!

The piñata is one of the weapons you get from the weapons barrels. This will come naturally. Just use the piñata every time you get it. You drop it behind you, so your goal is to leave it in a good spot on the track for opponents to drive in to.
