Win all the cups to unlock all the characters. Once you win the last cup the trophy will pop.

Glitch warning: Not all the characters will unlock for some people. Be sure to keep an eye out on who should be unlocked. It should be 2 characters after your 2nd cup win, and then 1 character for every 2 cup wins after that. If this does glitch on you then you can create a new save file and then try again to win each cup. Coming first in the cup will be fine, you don't have to win all events, making it quite quick to get through. Do this in one sitting to minimise the chances of it happening again. All 8 cups took me 3 hours, back to back.
