How to unlock the Godskin Noble achievement in ELDEN RING - Definitive Guide
Godskin Noble is a boss you will see at multiple points within the game. It can be found in Spiritcaller's Cave, Crumbling Farum Azula, Volcano Manor, and Carian Study Hall.
I personally found this guy and defeated him in Volcano Manor, on my way to fight Rykard.
EDIT: Thanks to The S bot 9000, it seems the achievement only pops when you defeat it at Volcano Manor.
Godskin Noble is not too difficult, as long as you are not super under-leveled going into the fight. It uses a thrusting sword and can also throw fire at you. Getting it down to about half-health, it can turn into a massive bowling ball and start rolling at you at high speed.
NOTE: If you are fighting him in Volcano Manor, like myself, you can hide between 2 supporting pillars on either side of the room, and he can't hit you when he is in bowling ball mode.
It will drop different rewards depending on where you defeat it. In the case of Volcano Manor, it should drop 50k runes and the Godskin Stitcher sword.

I fought 3 of them (Spirit, Volcano and Carian) and only unlocked the achievement once I defeated the one at Volcano Manor.

Interesting. The first time I fought it was at volcano manor, so I wasn't aware that's the only place it pops. Good to know.

Optional
Location: Mt. Gelmir - Volcano Manor
Suggested Level Range: 85-95
Damage Types: Standard, Pierce, Fire
Weakest To: Slash, Hemmorage, Frostbite, Sleep
Drops: 50,000 Runes, Serpent's Amnion, Godskin Stitcher, Nobles' Presence
There are a couple of the Godskin Noble's around the world but the one for this trophy is located in Volcano Manor. He is able to inflate his body and then spin at you to roll you over. He is also able to break poise pretty quickly due to the Rapier he weilds. Another thing working against you is the arena you fight him in, which is fairly small also. When you see him inflate, run quickly to the side and try to hide behind something if possible until he is done rolling.
You can also put him to sleep using Sleep Pots, or coating your weapon in Soporific Grease. He is quite succeptible to sleep so you can chain putting him to sleep quite easily.

The boss is located in the "Vulcano Estate" as soon as you get there, start a dialogue with the lady on the chair) you need to agree to get the key to the estate, open all the doors, in one of them there will be a secret path, go down there there will be another path and the exit to the city . You run through the city further to the bridge, to another castle, there you find a balcony with stairs down, run through everything there and see the road up, there are 2 elevators in the form of cages. The cell down will be the dragon boss, the cell up will be the Aristocrat.

One on one boss can make you sweat. And it's really worth it. His attacks are fast, there are many of them, and most harmfully, they knock you off balance. But that makes it even more interesting. And all this is lost if you call on a spirit / phantom for help - the boss becomes completely helpless. The columns in the arena are more of a hindrance than a help. The target flies off, and the boss calmly deals damage through them.
Boss attacks:
First phase attacks
Belly Punch - Strikes with the stomach and pushes the character away. Does no damage.
Front Strike - Strikes the area in front of you with the hilt of the sword once or twice.
Piercing Lunge - charges for a long time, after which it makes a piercing strike in front of itself, moving forward strongly.
Step back - makes a horizontal blow and a quick thrust. Used by the boss to break the distance.
Hand strike - charges for a long time, then hits the character with a strong hand.
Black Flame Ritual - swings his left hand and creates a barrier of black flame around himself. The damage from the black flame continues to be dealt for some time, and the barrier deals fairly high damage in terms of balance.
Black flame - creates a fireball of black flame in his hand, which he then throws at the character. The damage from the black flames continues to be dealt for some time. The attack is most often used as a "punishment" for healing.
A series of attacks consisting of two stabbing thrusts and one sweeping blow. Used by the boss most often, sometimes combined with other actions.
Tail Strike - Slashes the tail around itself if the character is behind the boss.
Second phase attacks
Strengthening - having lost about half of its health, the boss rises up and then collapses down, dealing damage and strengthening itself.
Wheel - inflates, turns over on its side and begins to roll behind the character until he receives damage, or 10-12 seconds after activating the ability. Always used during the transition to the second phase, immediately after strengthening.
Area Belly Smash - Stomps with the stomach like in the first phase, but followed by a wave of black flames surrounding itself.
Quick piercing lunge - make a series of quick piercing blows in front of you: 3 quick thrusts, 2 thrusts, another with a slight delay and the final one.
Jump - the boss inflates, rises up and collapses down, dealing damage over a large area.
All attacks from the first phase can be used by the boss in the second phase, except for the Belly Slam, which has been replaced with an improved version.
