There are a total of 7 legendary spells needed for this achievement. None are missable, so you can save them all for the postgame without worry. Unlike the legendary armaments and talismans, you can't have another player drop them for you, so you'll need to collect them all yourself.

Just to add here. I had a lot of trouble getting the Turtles to spawn for the puzzle for Ranni's Dark Moon. Best advice I've seen which worked for me was to walk up to the statue that gives you the puzzle prompt and the door, after using the site of grace. The site of grace seems to bug the quest.
I also only had to kill the first turtle and the door opened, without saying it had opened. Basically just keep resetting the quest at the statue, after you fast travel or use the site of grace.

for the turtles you can not fast travel or any loading, apparently that will glitch it. you will need to run to all 3 spots. Though i was messing around with the wind tunnel one before going to the tower, think i killed that one without realizing it.

I walked off the cliff and dropped through the turtle hanging to the side; this killed it and caused the seal on the door to open. I just assumed all three turtles were nose-to-ass on the cliffside and what I did was required to "find" them all. Picked up my ~~souls~~ runes and walked inside.

For me, killed the 1st, but the 2nd turtle didn't spawn, so went for the 3rd. When I killed that, the message appeared the seal of the door is open... so in my case 2 of the 3 was enough to open the door. Thanks the video!

I have collected all legendary sorceries and incantations and the achievement won't unlock, I have tried the chest method where you put them in your chest and take them out again to no avail. Any thoughts or ideas on how to unlock this achievement would be greatly appreciated. Cheers

The advanced Dragon Incantations are only available at the Dragon church in southern Caelid, not the one in Limgrave. Could be worth adding to the solution.

For Chelona's Rise, there is a known bug with some players. After touching the statue, if you fast travel or die or enter any kind of loading screen, the “three great wise beasts” will despawn. So you have to run back and interact again with the statue at the tower, then saddle up and find the 3 turtles on foot. FYI for any having trouble like I had for an hour trying to find them.

There’s a difference between Church of Dragon Communion, off the coast of Limgrave, and the Cathedral of Dragon Communion in Caelid. You can only get the more advanced dragon powers from the Cathedral.

Flame of the Fell God - Reward for defeating Adan, Thief of Fire at the Malefactor's Evergaol.
Greyoll's Roar - You must first defeat Elder Dragon Greyoll in Caelid, who can be killed with bleed safely or by killing the smaller dragons around it. Then, it can be purchased at Cathedral of Dragon Communion in Caelid for 3 Dragon Hearts.
Ranni's Dark Moon - Found on Chelona's Rise after unlocking the seal. You must kill three turtles that are spread around the Moonlight Alter area.
