For the monster-killing achievements, I can confirm that killing rats and other harmless wildlife counts towards unlocking said achievements. I can also confirm that, barring a future patch, you can save your data when near a group of rats or other wildlife, then kill everything. After that, you can reload your save and reenact the slaughter. The kills seem to be cumulative across all saves.
