can be done in Grand Prix mode, select any track, any car, as few laps as you like, set the gearbox to manual in the driving options, button 'A' upshifts, button 'X' downshifts.
any position will get you the Achievement

Best Way to do this is to go to grand prix mode set it for 1 lap change settings to manual gears in the start commard ,Any track will do remember u dont have to come 1st for this achivement kk Happy Gaming

Set the race distance to 1 lap. Complete the race with any team you want and at the end of the race, the achievement should pop up. you can complete the cockpit achievement as well

When starting a race and selecting length and difficulty, make sure you change the gears to manual. The difficulty or track doesn't really matter since you just need to complete the race.

In driver assists, change the gears to manual. shifts up, shifts down. You only need to complete the race, so take your time and get used to shifting the gears. There is a rev counter (on your speedometer) that you should keep an eye on. The sound of your engine is also a good indication of when you should be changing gear.
