During a single player race, hit pause and navigate to mid session save. Choose the option 'Save and Exit', then from the main menu, return to the same mode and you will be taken back to where you were.
I would recommend using this in career mode, this is what worked for me.

During any racing session, press 
and select 'Mid-Session Save'. Your race progress will now be saved and you can continue from exactly where you saved on the track the next time you play.
