This is best done with a friend but can be done solo if there are a lot of people online and one of them happens to join your lobby.
Head to Multiplayer > Online Championship
Create a new Championship.
To save time, choose only 1 race (Japan Short), no Qualifying and the minimum amount of race laps possible.
Once somebody joins the lobby (or you join somebody else’s lobby) being the race, and all players who race will get the Achievement at the end,

It's not impossible to do solo, but this is dependent on finding a Championship lobby in the Unranked Multiplayer that is open to the public.
To clarify, an Unranked lobby is different to a Championship lobby, but both are found in Unranked Multiplayer.

From the main menu select multiplayer and then championship. You can search for a public session or set-up your own session, which can be made public or private. Both will work for the trophy so you can find a single boosting partner and create a private championship. If you’re looking for a boosting partner to get this out of the way please refer to the dedicated boosting thread found HERE.
