This can only be done in Career.
To win the Championship by the time you finish the US Grand Prix (race 18 of 21), you need to have a lead of 75 points over the second-placed driver in the standings.
If you set the AI difficulty to the minimum (0, Very easy) and win the majority of races up to this point, you should have no trouble in doing this and may unlock it as early as Singapore (race 15 of 21).

Im at USA with an almost 200 point gap and it still hasnt popped :(

The USA Grand Prix is the 18th race in a 21 race season. To obtain this trophy you’ll need to get enough points by the end of this race or earlier for the competition to not be able to catch you on points in the remaining races. The easiest way to assure this is by simply winning all races. If you do win all races you’re guaranteed the championship in the 17th race at Suzuka (Japan) at the latest. This can be done on any difficulty setting.
