How to unlock the Welcome to the real world achievement in F1 2018 - Definitive Guide
This can be done in any Game Mode except for Time Trial.
In the Assist settings, be sure to turn everything off or to its strictest setting.
For Gear Shifting, choose Manual or Manual with Clutch (either works for the Achievement).
I recommend doing the race with a Modern Formula 1 Car as some Classic Formula 1 Cars won't change gears on Manual with Clutch on a controller.
Complete any race with these settings and the Achievement will unlock regardless of race result.
Note: Flashbacks are not considered Assists and can still be used.

You can get the achievement by using regular Manual gearshift option (no clutch).

This can be done in any game mode, but for the easiest time select Grand Prix from the Main Menu and turn off all of the assists, both visual and mechanical. Also make sure to use Manual gears. Now go on to complete a race for this trophy. This trophy doesn’t require you to win the race so you can take as long as you want.

You just need to complete the race, you don’t need to win it, i.e. you can safely ride behind everyone else and still get the trophy. Done in any Grand Prix, the number of laps can be set to a minimum
