How to unlock the F2 Racer achievement in F1 2019 - Definitive Guide
From the main menu head to Solo and the Championships tab on the right. Here are a range of different championship scenarios to choose from, select the second one, "2018 Formula 2 World Championship".
This championship consists of 12 rounds, each has practise, qualifying and 2 races (main and sprint). You can choose to make this as long or as short as you want. For speed I'd recommend no practise, one-shot qualifying and 5 laps for each the main and sprint races.
Choose your preferred team and driver (The F2 series is spec, so no team has any performance advantage over another. That said some teams perform better than others so if you want a strong teammate to help towards the team championship, pic a top team like Dams, ART or Carlin) and setup the assists how you prefer.
Once you begin, aim for pole (4 points) and win the first main race (25 points) and get the fastest lap (2 points).
The second (sprint) race reverses the positions of the top 8 from the previous main race. So if you won, you'll start 8th (2nd starts 7th, 3rd starts 6th etc). Finishing positions 9th onwards start in their finishing positions.
Only the top 8 finishers score points in the sprint race, so aim for the win (15 points) and fastest lap (2 points). If you maximise the weekend you can score 48 points in total. Hopefully your teammate fairs well too to add some points for the team championship too.
By round 8 you should have accrued enough points to breeze the drivers championship. Depending on teammate performance the team championship may not be so safe. That said it is not imperative to win either championship for the achievement, but if you get both a shiny gold badge and a trophy for your cabinet will be earned.
With that in mind feel free to retire from races from this point (wait for the race to start, hit menu and "Retire from session") to really speed through the season, maybe just completing a qualifying and a race here and there just to keep your team at the top of the points table.
At the end of the season in Abu Dhabi, after the final sprint race results, your achievement will pop and you will be awarded your prizes accordingly for your finishing position in each championship.

For walkthrough writing purposes I just tested whether it was possible to unlock this achievement by retiring from every session - and it was possible. This method takes around 30 minutes if quickly retiring from one-shot qualifying and both races in all 12 rounds, as well as quickly skipping through all results screens and all cinematic videos.
For reference, this was done with the game at Version 1.03 (in case a future patch changes the unlock requirements).

First off, on the main menu (Home page), go down to F2 World Championship.
The fun thing to do would be to complete all races (5 Laps) from the feature and sprint race and enjoy the experience.
OR, what you could do if you can't be bothered really and just want to get the achievement out of the way is simply crash out of or retire from each session.
It is a lot less fun but it does get you the achievement quicker and in less than an hour.
Achievement will unlock at the results screen in Abu Dhabi.

Unfortunately this trophy won't pop after the three F2 events in career mode. You'll have to select the "Events" tab from the main menu and then select 2018 FORMULA 2 WORLD CHAMPIONSHIP. This championship consists of only 12 race weekends but contrary to F1 each race weekend features 2 races, a regular race and a reversed sprint race. Doing the full season will take up a lot of time but luckily since you only have to complete this, you can skip the races and still obtain the trophy.

2018 FIA FORMULA 2 CHAMPIONSHIP mode on the home screen. If you don’t want to play F2, you can always leave the session. It will take about 30-45 minutes. Participation is enough to achieve.
