This isn't as hard as i originally thought it could be 
From the Home menu, toggle
to "Solo" and select "Time Trial".
Choose whichever series you like, F1 2020 obviously being the current(ish) drivers.
Select your team/car and driver (in F1 and F2 series), or an older car in the Classic series.
You can then select your favorite track, along with your assists. I personally chose Britain Short, as it's a cool little quick circuit :)
Default Ghost for me was over a minute and pretty easy to beat (that might be reflective of yout AI levels, i'm not sure). Don't push it the first lap (to set a lower time), but then go for it on the second, being able to easily beat your PB.
The Rival Ghost shows up after your first time, which as i didn't go all out, that was pretty easy to beat as well.
Achievement unlocks after you beat the Rival Ghost (and while i was still out on track)

Ok, something that this guide doesn't tell, is that you can choose your rival ghost.
After selecting the track, press X (Session info) and there you can check the time of other players, so just pick a crappy one you can beat and there you go.

Download the setup of the user who has set the fastest lap time of any track to your car first, then go to track. Set a clean lap just slightly quicker than the default ghost time. Then wait for the game to set you a really slow rival and go as fast as you can without going off track and the achievement is unlocked.

After the second round, we fulfilled two of the three conditions for the trophy, namely: Defeated the ghost by default and beat the personal best. All that remains is to defeat the “ghost opponent”. The opponent is assigned to you based on the time you showed on the last lap, which is why we didn’t need to drive at the maximum the last lap.
3rd lap - we easily overtake the opponent whose time was chosen for us, which was slow for us on the last lap.
