You get a trophy after each race win as well as becoming Driver Champion, in any career mode. You also get one for finishing the Braking Point story.
In order for progress to count, you need to first claim your trophy from your mail.
(press down) when on the home menu or your career/team HQ and 
to 'Mail'.
to click on the email with a paperclip containing your trophy, and again to claim it. You do not need to place any on display, just claim them.
You only get a trophy once at a track, so if you win at Italy in My Team, then again in Two Player, you will only get one trophy.
Claim 15, and the achievement will unlock :)

Didn't realise it was only career mode you got the trophies in. I've been doing online/grand prix and was wondering why I wasn't getting any

Got one trophy for finishing league, so It's possible to boost in multiplayer
