you can complete this in any mode (i completed this while doing time trials).
when you are at Great Britain (Silverstone), Belgium (Spa), Italy (Monza) and Monaco -
and select the second option to Rewind/Flashback.
again, and it will take you into photomode. you do not need to do anything else.
once you have done this on thise tracks, the achievement is yours
NOTE: if doing this on time trial - be careful not to actually flashback as it will make your lap invalid.
