I suggest adding the locations of the other pub games, but this method worked like a charm

The Bloodstone game is by far the easiest way to win this achievement. When you begin the game, go into the bank and take out about 3000 chips. Place you arch bet on 3, then each round place bets on 5, 4, 3, Trips, and all four specific triple rolls. The chances of a roll that low and triple are very low, and you'll pull in 80 chips a roll. This will give you 500 on your 7th roll. You can keep track of your progress on the stats page. Before you exit the game when you have 500, go into the bank and pay off your debt. Also, if by some rare chance you are hit with a triple roll, you'll find yourself somewhere around 2000 in the red. Being the achievement is for 1 session, it's best to exit the game and then start over fresh.

This works great!! really helped me out. I had tried other ways but they didnt work for me. Using this i got the achievement in just a couple of mins

I have found Fortunes Towers to be the best game to earn this achievement. The game is in Westcliff. It is easy to earn money if you simply watch what the payout is. If it is lower than what you bet then don't take the deal. Unless the Gate Card has already been used. Then just take the deal as it is more likely you will lose the next deal. As soon as the total for the cards makes a payout that is more than your initial bet then you should take the deal. You must also have played the other game types, as the achievement description says.
There are 4 game types;
-Keystone (Cow and Corset in Bowerstone Market)
-Bloodstone (Bloodstone)
-Fortunes Towers (Westcliff Tavern and Knothole Island)
-Spinnerbox (Sandgoose Tavern in Oakfield, Lucky Heather Tavern in Rookridge, and traveling games master in Brightwood)
There are 4 game types;
-Keystone (Cow and Corset in Bowerstone Market)
-Bloodstone (Bloodstone)
-Fortunes Towers (Westcliff Tavern and Knothole Island)

the oakfield game is by far the easiest the spinerbox game. crank up your bet to 10 gold and just spin away you will eventually match 3 triangles which then spin the centre. if the centre then spins to a triangle it will pay big it paid me 750 gold. now you just need to play the other three games in westcliff, bowerstone and bloodstone.

This may seem daunting if you have struggled with some of the games available, just make sure to try every game on offer from guys in towns and wandering around. The easiest pub game is the one in bloodstone, you play to lose rather than win. In this pub game gaining 500 gold is easy.
What I did was I played the bloodstone game for a few mins and got over 500 I hadnt played any other games and was just goofing around to see if I could get the 500 because Ive never been particularly good at the gambling what i found to be a really good method was to put your arch bet on the 10 and the 11 because they take the least away if you do happen to have them fall. then i placed inside bets on the 7, 8 and 12 and 13 for the first roll then random ones from there. it was surprisingly quick. then when i played the other games for like 1 or 2 rounds it unlocked. I dont know if this works for everyone but it definately was not as scary as i anticipated.
The four different games you have to try are as follows:
Keystone - Can be found at the Cow and Corset in Bowerstone Market.
Spinnerbox - Can be found at the Sandgoose in Oakfield, the Lucky Heather in Rookridge, and variants of it can be played if you find a wandering game's master.
Fortune's Tower - Can be found in Westcliff's pub. The pub will be called the Bloody Stump in its default state, but a quest can be completed that will improve Westcliff's economy and change the pub into the Foaming Jugs.
Bloodstone - Can be found in the Leper's Arms in Bloodstone.
I played each of these extensively, and would recommend you do the same. As you earn points you can rank up the same way you would as if you were working a job. Going up in rank allows you to borrow more chips and place larger bets, thus earning larger sums of money a bit easier. Once you have played all four and are at either two or three stars in pub games, then you can get the achievement.
I recommend finding the travelling games master in Brightwood. The variant he has here awards free spins in Spinnerbox. What I found in Spinnerbox is that the more spins the better, as the game's "luck" system seems severely broken. It would appear after a few failed attempts you're almost guaranteed to win something. So the more spins the better. The best part is, those free spins can earn you even more free spins. At one point I racked up to thirty free spins in one go. Earned myself nearly 3,000 gold doing so. Seemed a bit easier than trying to figure out how the other two games worked.
