Once you have the Perk either Join a friends game or host one. Find a Vehicle and have your partner drive and look for an enemy Vehicle. Once you find one pull alongside it and you'll get the option to perform a takedown. Simply hit

to change the seat to the co-driverseat and pressed to do the vehicle-takedown. It's tricky but it worked! I hope this helps somebody.

To get this achievement you need unlock the vehicle takedown perk first before you can even buy it with skill points and to do so you need to complete one mission of kyrati films: racing, Well it's not mentioned how to find those missions but its really simpler than what it sounds like.
You just need to keep liberating outposts so new kyrati films missions appear, So after completing one of those you will unlock the perk its only costing 1 skill points after purchasing it go to online Co-op with a friend and make sure the guy going for the achievement is sitting in the passenger sit now driver need to find an enemy vehicle and drive next to it the passenger need to click
when it shows up in screen and achievement should be unlocked.

Note: Before you even attempt this, you need the "Vehicle Takedown" skill. This is unlocked by completing one race, and then it costs 2 points to learn. You also need to complete Act 1 in order to even play co-op.
In order to earn this trophy, you will need to perform a "Vehicle Takedown" from the passenger seat of a vehicle. This can only be earned in Co-op. This will be very challenging to complete with a random, so we recommend to organize a boosting session with a partner. Both you and your partner can take turns earning the trophy. One will need to find a vehicle, while the one earning the trophy will be on the passenger side. Bear in mind that ATVs won't count as there is only one seat. When you find a vehicle, drive around until you find an enemy vehicle. Have the person driving, drive up to the left side of an enemy vehicle, so the passenger is nearest the driver of the enemy vehicle. The player earning the trophy will then get a 
prompt. When you see this prompt, immediately press to trigger a vehicle takedown.
In order to invite a player, you will need to select "Continue [ONLINE]" from the main menu of the game. When you continue onto the game, go to the "Co-op" section of the 
menu, and select "Invite Friend" to your Co-op session. From there you can invite your partner. In order to accept an invite, you will have to be in the main menu of the game itself. From the main menu, select "Friends". From this menu you can view your invites with 
, and accept an invite.
