How to unlock the Been There, Done That achievement in Far Cry 5 - Definitive Guide
The animals are :
Deer: South of Fall's End is a hunting ground. South of Green-Busch Fertilizer Co. Northwest and South of Lorna's Truck Stop.
Pronghorn: East and West of Whistling Beaver Brewery.
Elk: Directly West of US Auto which is north west of Fall's End.
Bison: Directly West of Moonflower Trailer Park there is hunting ground on the hill.
Caribou: Directly East from Bo's Cave (Which is East down the hill from PIN-KO Radar Station) there is a hunting stand and a bunch of Caribou around. Directly South of Wolf's Den/Helipad. Southwest of the F.A.N.G. Center.
Moose:Directly East and Southwest of Peaches Taxidermy. South of Drubman Marina. Judge Moose also count.
Hare: Directly North and North West from the Moonflower Trailer Park, East of Dead Man's Mill (Southwestish of Mastodon Geothermal Park). I used Boomer and Peaches to catch them because they are fast
Boar: Directly West of Moonflower Trailer Park. Across the road there is a hunting ground. West of Jefferson Lookout Tower, across the road below the mountain. Directly West of St. Isidore School.
Skunk: Northeast of Moonflower Trailer Park, Northwest of King's Hot Springs Hotel (Below the road running along the river). Southeast from the Ranger Station in Dutch's Region (across the water or Northeast from the bridge from Dutch to Faith's Region).
Wolverine: Directly North of Doverspike Compound (Northwest of US Auto). West of Jefferson Lookout Tower, on top of the mountain.
Wolves: West of the Baron Lumber Mill. Northwest of ELk Jaw Lodge. South of Catamount Mines (Southeast part of John's Region). Judge Wolves also count.
Cougar: Southeast of Rae-Rae’s Pumpkin Farm, East from Gardenview Ciderworks. South of Joseph's Word, down Angel's Peak. North of 8-Bit Pizza Bar.
American Black Bear: Use bait to attract American Black Bears (Grizzly too). If you’re hunting them go directly north of Hope County Jail or South across the river. East of John's Gate down the hill. West of Seed Ranch in the forest next to the airstrip also South of Lamb of God Church.
Grizzly Bear: East of F.A.N.G. Center, slightly East of Haskell Lookout Tower on the hill. Between the 2 Caribou Markers East of Bo's Cave (East down the mountain from PIN-KO Radar Station, across the street). Southwest of Whitetail Park Ranger Station.
Turkey: North of Fall's End along the water, South of Deep North Irrigation Reservoir across the road.
Bald Eagle: There is a Eagle marker Southeast of Copperhead Rail Yard, East of Roberts Cabin on the top of the hill (west of the Cougar marker). Also find them is Raptor Peak in the North East of Faith's Region. There are about 6 to 7 that fly around at the top and you may have to shoot the civilians otherwise they will kill the eagles and they will fall off the mountain and be a pain to find and skin, they Eagles disappear after you complete the Prepper Stash on Raptor Peak.
You can kill the animals using your "Specialist" that you have assigned by aiming with and then using either or to have your specialist attack. Be careful not to use anyone in a plane or helicopter because they will damage the skin and I am not 100% sure if that still counts or not.
I had Boomer with me because he is good at spotting animals I may not notice and I also used him to chase down animals I wounded. I used the 50 cal Sniper because it is a insta head shot kill on most animals except Bears it took 2 shots.

When there I got 3 to spawn in about 15 mins, shot them with a shotgun to get them to divebomb me and when close enough shot them in the face.

- Now I found it seemed to trigger the eagle to come out when I was fishing in the nearby water, as seen in the video below. Then all you have to do is kill and kill it, fast travel, and do it again :)

I would advise hunting any animal you happen to come across naturally. Do not actively hunt down animals until you unlock Boomer the dog in John's Region, because he will mark nearby animals making this considerably easier. You will capture every type of fish whilst going for the Hope County Master Angler trophy as well.
Do note that animal spawns can be somewhat sporadic. The hunting areas marked on the map are general and they can spawn within 100-200 metres around the area; if you have Boomer with you, he will sniff out and mark nearby animals. Fast travel back and forth between areas if you can't find any animals. You can also use the 'Ultimate Hunter' homeopathic to temporarily mark nearby animals as well.

Far Cry 5 All Animals & Fish Locations (Hunting Spots, Hard Fishing Spots)
There's a total of 28 Challenges you must complete for a total of 28 animals (16 land and 12 fish). Some of the Challenges have multiple tiers, so keep an eye out for them. It's worth noting that making progress towards the "Hope County Master Angler" achievement will help with the fish-related challenges.
The location of each animal varies, so make sure you're looking out for the hunting signs scattered around Hope County. It's also worth completing the "Man's Best Friend" quest in John's Region so that you can unlock Boomer as a Fang for Hire. Boomer has the ability to sniff out and mark any nearby animals.
