How to unlock the Top of the Pecking Order achievement in Far Cry 6 - Definitive Guide

You should get this Trophy as soon as you can, since I have a feeling that this will get removed.

Once you get to Montero, go see Ivan and start the fight. Once you win 2 fights, you will get the Trophy.

If you are suffering at the last difficulty level, then the tactics are simple: dodge and press a more powerful attack. Short attacks and jumping didn't work at all. Accordingly, the longer you press the evasion, the farther the rooster bounces.
