There are 5 Mythical Animals. Two of them are a pair of wolves. The black jaguar only spawns at night and the spawn is buggy.

NOTE: There is no way to advance time at this point in the game's life. Do the jaguar whenever you notice it's night, as when you want to do it, if it's day, you'll have to wait the 30 minutes or so for night. Additionally, when the spawn is bugged, fast travel a decent bit away and then back to the house on the cliff. I don't know if it matters, but I tried to always land at least 100m from the spawn point to give the game time to register to spawn the big cat. It took me one night but 4 approaches to get it to spawn.
