You will need to catch 6 fish to score this achievement. Just as ComboChrist has mentioned this is much easier than in Far Cry 5 since you don't need bait anymore. The fishing rod is unlocked via perk.
You also get one perk point for every new fish you catch.
Here's all the fish you need to catch. Some of them have challenges associated with them, others do not.
Fish 1: Rainbow Trout
Fish 2: Bull Trout
Fish 3: Smallmouth Bass
Fish 4: Chinook Salmon
Fish 5: Largemouth Bass
Fish 6: Paddlefish Sturgeon

Largemouth Bass and Paddlefish Sturgeon do not have challenges.
That means if you are at 66% on the achievement completion but have all the fishing challenges, those are the 2 you are missing.

I dont know what im doing wrong, you sure these poles dont need bait because I went to first 2 spots and there is between 6-8 fish jumping and its been over 20 minutes and nothing will bite. they are literally 1 foot from pole

To unlock the You're a Catch trophy in Far Cry New Dawn, you will need to catch one of each of the six different types of fish in the game.

Just a quick note to add to this: if you're missing fish after completing all the fishing challenges, the 2 you're missing are the Paddlefish Sturgeon and Largemouth Bass.
