How to unlock the Reap What You Sow achievement in Farming Simulator 19 - Definitive Guide
Note: It doesn't matter if you do it yourself or hire a worker for this to count. However, it must be done on a field you own, hired jobs do not count for this.
This achivement chain requires more work than the other 3, because you will have to haul the harvested crop away. Different crops require a different types of harvesters so make sure you have the correct type of harvester for the crop you have before you begin. You will also need a hopper and something to pull it with so you can unload the harvester when it gets full. The bigger the harvester, the faster you can get this done. It is faster to rotate through the cultivating, sowing, fertilizing and harvesting on the same field so you are working on the achievements for all 4 instead of doing one group at a time.
Hire a worker to run your harvester, while you sit in your haul vehicle. The harvester will start flashing beacons when it gets close to full (80% full I think), and it will stop and wait for you once it reaches 100% full. To empty the harvester drive your haul vehicle up to the left hand side of the harvester and when the hopper is in place it will automatically start to fill up. You can either wait until the harvester is completly full, or drive alongside it very slowly when it gets close to full so it doesn't have to stop. Once your hopper is full you can either sell the crop somewhere, put it in your storage area, or dump it somewhere. It doesn't matter what you do with it for the purposes of this achievement.
You should get this naturally while completing these.

The above guide was very helpful, I just wanted to add that hiring a worker for the harvester, it took about 40 minutes to harvest a full hectare. For those wondering how long this takes
To get the Harvest X hectares trophies, you have to harvest the crops in your own land. Go to the shop and buy a Harvestor, note that it only works with a suitable header. Make sure the header you bought is suitable for harvesting the crop type of your farm, for example, Wheat/Barley uses different header then Corn/Sunflowers, and some crops uses specific Harvestor, like sugar beet/cotton/sugar cane. Attach your header to the harvestor you bought at the shop, drive to your farm, unfold your harvestor, unfold and lower your header, turn the harvestor on and drive in to your farmland to harvest. Once the harvestor is full, drive a tractor/truck/car with a trailer attached next to the harvestor and press [pipe out] from the harvestor, now when your trailer is right below the pipe end the harvestor will start dumping the crops into the trailer, now you can drive the trailer to a silo to store it or a place to sell it.To check how much land you harvested, press option and scroll to the statics page, note that you don't need to harvest all the hectares in one session. Note that doing contract does not count towards the total hectares. Note that you can hire workers, it counts.
Note: work done by hired workers does count, however work done on contracted fields does not - you must own the field for the counter to increase. These achievements are also known to be slow sometimes, so you might have to do a little extra.
Note 2: This must be done in a single save game, but is not limited to a single session
Harvesting is running the combine harvester, the forage harvester, a beet harvester, potato harvester, or sugar cane harvester. The started fields on the included maps are generally less than 3ha (hectares) each.

It is optimal to harvest hay. unlike other crops, it can be left on the field, re-seeded with grass on top
seeders, unlike combines, do not fill up and the whole process goes faster and in semi-AFK mode
