Hey Guys,
now there is finally a way to get the Achievement legit. (Sorry for my German-Englisch ;) )
1. go to the Download section and Download the Pöttinger Impress 125FC Pro Baler.
2. Start a new Game -> Farm-Manager -> Elmcreek
3. Buy Field Nr. 71 and place your Home by the Field
4. Sleep a Night so the Field is ready to get Mowed.
4. Buy 1. Mower Krone BiG M 450 2. The Baler and a Tractor you can effort (for me ist was the Claas Axion 870)
5. Drive the Mower to the Field and Start Mowing with the swath mode activated. (Mowe around 2/3 of the field)
6. Take your Tractor and the Baler and Start making Bales.
7. After 40 Bales the Achivement is yours.
Note: you can see the Progress at the Achievment.

I just popped this achievement,
I did not start a new save (elmcreek on easy).
I acquired the baler,
acquired the field,
just worked on other tasks/achievements while waited for the grass to become "ready to harvest",
used a tractor mounted mower pair (novacat a10 and novacat 301).
Noticed the achievement is still listed as unobtainable (not true as I may have had to download a mod (allowed in game) and used the game mechanics) so I did submit an achievement flag report with a description of how I got the achievement

Are you making round bales or square bales? If they are round, what size are they? Are they being wrapped by your baler?
Plot 71 was all ready planted with grass and was ready to harvest. Do I need to grow my own grass or can I just use the grass that is all ready on this plot?

New Holland T8 435 Genesis
You need a large field or multiple fields
Plant grass, fast forward time till ready to harvest
Mow your field. I used Kuhn GMD 8730-FF
Kuhn GMD 3123- F attached to new Holland tractor
Use Windrower to gather the grass into easier rows for collection
Windrower Kuhn GA 15131
Then use baler
New Holland BigBaler 1200 high density
Hold right bumper click right analog stick to change bale size to (180cm). This bale wrapper only wraps 180cm bales
Then use bale wrapper
Kuhn SW 4014
After wrapping 40 bales the achievement will pop
You can buy or lease all of the equipment, cheaper to lease and return.

Make and sell 40 cotton bales IN ONE SESSION. You can collect/harvest as many bales as you want over as many sessions as you want, but you have to sell them in one session (without saving/exiting/...).

Make 40 wrapped grass bales - you don't need to sell them.
I have seen reports of this trophy being glitchy by resetting your bale count if you save and leave, so it's recommended to do this in one sitting to avoid this potential bug.
The first step is to get a mower, baler, and bale wrapper. You can either buy or lease one yourself or borrow it during a contract.
To buy or lease your own, press
to bring up the buying menu and use 
/
to change categories to "Tools". Now using 
/
, select "Mowers"/"Windrowers"/"Balers" and press 
to see what is available. Use

to select one you like then press to move to the next screen. Now using /, make whatever changes you want to the available options (
for paint changes) then press to buy or 
to lease it.
Ideally, you want to pick one with the widest coverage you can find to speed things up.
Don't forget to also buy a tractor under "Vehicles" and a weight (if needed) under "Weights" and make sure the power output of the tractor is higher than the requirement listed by the tools. Also don't forget to buy a whindrower, baler and bale wrapper.

Move along to the next one while it wraps to save some time and wait for the wrapped bale to be dropped before grabbing the next one. After you've wrapped your 40 grass bales, the trophy will pop.
