The quickest way to earn cash is to start off by collecting all 100 horseshoes (See guide for The Collector achievement)
Once all 100 are collected set the speed to x120 and wait until it starts to rain, once it has finished raining a rainbow will appear, make sure to set time to either real time or x5 so that the rainbow doesn't disappear quickly.
Rush to the end of the rainbow, personally when I did it, it was over near the campsite in the top right of the map, once you get there you will find a pot of gold with $1,000,000 in it.
Then if you haven't already got an extra $200,000 dollars then do a few missions until you get $1.2 million, buy a Wind energy converter, they cost $1.2 million. I know that seems ridiculous spending that amount of money but they give you $4,000 per hour, if you set the game time to x120 you get that $4,000 every 30 seconds, as long as you don't have a load of vehicles you will get roughly $480,000 per real life hour, I just idled for approx 3hrs, came back and bought another wind energy converter.
I now have 4 wind energy converters and they make approximately $1.92 million, so almost $2 million every hour.

The rainbow didn't appear. I re-loaded several times thinking I might have missed it. I tried waiting in different areas on the map (including the campsite) ... No rainbow.

Sorry to hear that the rainbow didn't appear, I have come across a few people now that didn't get the rainbow, when it appeared for me I was at the main farm, the only thing I can suggest to try is set time to x120 to get to the next day of rain and see if it appears after that day.
