on character select screen pause then unpause but dont let go then press a x y at the same time to unlock the cheats screen set it on infinte life and whallah you can get all single player achievements

This solution doesn't work post-patch, and if you're like me and bought this game on a previous xbox 360 system, you can't be off-line and play this game, so you have to get the patch. The only way around this, is by doing a license transfer. If you're going to use a license transfer, keep in mind you can only do it once a year.
If you wan't to get this the legit way, it can be pretty difficult. The A.I. can be tough, even on easy. I also find that when I'm close to beating them without taking a hit, the A.I. gets ramped up. Maybe this is my imagination.

I got this using Kim. I would do the cresent kick and while being crouched punch and kick them. Make the Computer come to and whenever they jump you also jump and kick them. Whenever we both did this I would always hit them and then do his bicycle kick which would make them fall down on the ground. The I backed up to make it happen again. If they are blocking throw them. The hardest person to do this on is Big Bear because if you get to close to him he will either Bear Hug you, pick you and throw you, or his side slam.

I found a way that did it for me. You still have to work for it, but it wasn't as hard as when I just tried to fight it out
Basically, on Beginner difficulty I choose Joe Higashi, and then choose to fight against Cheng Sinzan
Get close to where you're just out of reach, and crouch and throw some fast weak kicks. (Not to hit him, but he often jumps straight up)
Wait for him to get close to landing, then trip him with a crouching hard slide kick.
If you slide too early, he can kick you out of it, so make sure he's about to land.
Back up while he's on the ground/getting up and repeat the process. If he switches planes, make sure you just roll up or down. He can hit you out of your jump attack.
I mess up on the first round, but get it on the second!
EDIT: I realised that I wasn't on my profile when I did this, so I tried it again on my own profile. It took a few tries, but it worked
