There are 13 challenges to choose from this year.
Unlocking a Skill Challenge requires you to complete Gold Level.
The easiest one I found was goalkeeping, which requires you to make a number of 1 v 1 saves.
Other notable straight forward challenges include dribbling and shooting. Everyone has different skills, and getting everything to gold level is a requirement for the Silver Lining achievement, so going for this should show you what Skill Game is most suitable for you.

Bronze being the easiest, and then working your way up to gold, which can sometimes be quite challenging, depending on what skill it is you are doing. I found the goalkeeping challenges to be some of the easier ones however a few mates said the shooting challenges were easier, so I'd say it's all down to pyre player. Once you have successfully completed the gold challenge, you will unlock this achievement.

Complete the bronze, silver, and gold stage of a skill game to unlock its skill challenge.
Emperor, 95, Barad
A skill challenge is the final stage of a skill game, the platinum stage. You will need to complete the Bronze, Silver & Gold stages of any skill game to unlock this achievement. It is recommended that you choose the Goalkeeper skill game, as you will need to beat all four stages for that skill game for "Legendary" either way.
