How to unlock the End of Story achievement in FIFA 21 - Definitive Guide
You can play through The Debut story mode on any difficulty, even beginner. Just progress through all the cities' training games and match, finish the 5 matches in Dubai, and this will unlock.

Volta / Play / The Debut
This is a story based storyline where you watch cut scenes and then play games. This mode isn't very enjoyable so this guide is how to zoom through it as fast as possible.
Hold X to skip through all the cutscenes and go into Settings and change your difficulty to Beginner. Start your first match in San Paulo, where all you have to do is score one goal, regain the ball, and then stand on your side of the pitch with the ball not moving. Since the AI is on Beginner they will not come after you.
Sit there until half time, which you'll manually have to resume the match. Regain the ball again, stand on your half of the pitch again and wait out the rest of the game until you've won. You'll have to do this three more times until you've won the opening tournament.
After the tournament you can participate in a Skill Game which is mandatory for another achievement and CANNOT be returned to, so this is your ONLY chance to do this game without having to erase your Debut progress and starting all over again.
Skip through cutscenes until you have another match to play in Milan, using the same method from earlier to win it. You'll have four Skill Games you have to play here, these ones can be returned to later however.
Skip through cutscenes until you can play a match in Sydney and do four more Skill Games. After Sydney is Paris, which is another game followed by four Skill Games. These are the last ones you have to play, as long as you've gotten so least a D Grade in all of them you'll unlock the achievement:
Now you're onto Dubai, where you have another four game tournament to win. After winning it you'll unlock the achievement:
You will now have one last game to play. Winning this game will complete the Debut and unlock the "End of Story" achievement at last. If you're going for the achievements in both stacks, both this and the "Star Studded" achievement will autopop upon logging into Volta on the other version. In order to get the "Da Skiller" achievement you'll have to play any skill game of your choice and the achievement will pop there.
One last thing, since this is an online based mode you might get an error "This feature is unavailable at this time, check again later" when trying to play a Debut match. This happened to me three times while playing through the mode, I had to completely close the game and reload it to resolve it. I have read online some people had to wait several hours for the atrocious EA Servers to do whatever they needed to do until they were able to play again.

This trophy is nice and simple, just play through "The Debut" in Volta.
To make it easier set the difficulty to the lowest so you can get the wins much simpler.
