Someone scrapped through the code of the game to work out the score values from each conversation. To write a proper guide here, all I would be doing is stealing others works.
I have read multiple reports of this trophy not unlocking for people. The general consensus seems to be, if you over use the glitch in Cosmos Canyon that allows you to repeat a conversation over and over to increase Barrets score, then you will end up on the date, but the trophy may not unlock. Only perform the glitch around 10-20 times. It is thought that if you go over a certain score then it glitches, so if you follow the guide completely then don't bother glitching. If you don't follow it at all then around 20 times. Credit for the glitch calculations goes to Lilley1593 on another site. Make a back up save before glitching, that way if you get Barret, but it doesn't unlock then you can use the glitch less on another try.
I went over the scores if you choose the perfect choices and the numbers end up as:
Aeris 35
Tifa 33
Yuffie 28
Barret 54
This achievement is HIGHLY missable, and requires dozens of dialogue choices to be made throughout Disc 1. You can find a quick rundown of this side-quest here with how it works and all the dialogue choices that affect it. Basically, there is a hidden point system that influences the characters in your party, and once you reach the Gold Saucer for the second time in the story, the character with the most points will invite you on a date. Getting Barret to win this contest is difficult because he starts with zero points, while Aeris starts with 50 and Tifa 30. Basically, you need to be sweet on Barret and piss off the girls for him to be your companion.
Luckily for us, the Jegged walkthrough I linked up in the Road Map outlines every single choice throughout the game that can affect this achievement, and which one to choose for the best outcome. Simply follow that and you will have no problem getting the achievement. It's easier to follow the full game walkthrough than the specific one I linked in the previous paragraph, to be clear. I simply linked that so you'd be able to have some background info on the achievement itself.

During the party’s second visit to the Gold Saucer, Cloud will be asked by a party member to go on a date at night in the amusement park. Depending on how you, the player, treated certain characters as Cloud throughout the game, either Aeris, Tifa, Yuffie or Barret will ask Cloud to accompany them on a date. In order to unlock this trophy, you must undergo the most difficult trial ever: getting Barret to ask Cloud out on a date.
Which character is chosen for the date is dependent on a hidden point system. Depending on the dialogue choices the player makes, the points for certain characters will increase of decrease, and the character with the most points during the second visit to the Gold Saucer will be the one to ask Cloud out on a date. Barret begins the game with 0 points, and so care must be given for him to end up with the most amount of points. This means, unfortunately, being mean to Tifa, Aeris and Yuffie when given the choice.
By following the Best Bromance Walkthrough by SirkSirk, you should be able to put Barret over the top. When Cloud hears a knock at his door late at night, Barret will enter and ask him out on a date, then you can then enjoy their precious date and your new trophy.
The simplest example: some time after the start of the game, you choose who to give the purchased flower to - Tifa or Marlene, Barret's daughter. Giving a flower to Tifa increases the chances of a date with her, giving it to Marlene increases the chances of a date with Barrett. In relation to LP, this looks like adding 5 units to the “opinion” of Tifa or Barret, respectively. However, keep in mind: your actions can not only increase the “interest” of candidates, but also reduce it. As a result, when you come to the “Golden Saucer” for the second time in the story, this is where it will happen. Which of the likely candidates has a higher LP level will be the date.
Date with Barrett:
1.Buy a flower from Aerith.
2.When talking to Jesse on the train, answer “I'm looking forward to it.”
3.Give the flower to Marlena.
4.Do not talk to Tifa in the bar, but immediately go to Barret in the basement. When
Tifa will speak to you, answer her “...Sorry.” Talk to you in the morning
to her and say “Barret's snoring kept me up.”
5. During an alarm on the train, do not rush anywhere and allow yourself to be caught in the carriage.
6.After the battle with Air Buster, answer "I doesn't know if I can hang on."
7.In the church, when Aerith is fleeing from the soldiers, ask her to wait every time,
but throw the wrong barrel every time.
8.When Aerith asks Cloud "Is Tifa your girlfriend?", answer "Yeah,
that's right".
9.When talking on the playground, select “Take her home.”
10.Before going to Don Corneo, equip Cloud to the fullest to
the don chose him. In a conversation with the Don, select “Umm...” and “Yes, his name
is Barrett."
11.In the sewers, talk to Tifa first.
12. To Marlena’s question about Aeris, answer “I don’t know.”
13.In the Sin-Ra Building, when choosing who to send to protect Aerith, choose Tifa
(“Tifa, I'm countin' on you!”).
14.After the battle, form a team like this: Cloud, Barret and Red XIII.
15.In the cell, talk to Tifa and answer her “Kinda hard.” Repeat
until you get tired of it.
16.Speak to your neighbors in this order: Barret, Aeris, Red XIII.
17.After escaping from Midgar, assemble a squad this way: Cloud, Barret,
Red XIII.
18.In Kalma, talk to the woman who talks about Mako and the woman who yearns for her old
life as a girl. Give the first a negative answer, and the second an affirmative (“Yeah,
maybe").
19. After the memory session, tell Barrett “Wait a sec” “Beautiful,
just beautiful."
20.Agree to help the residents of Fort Condor.
21.Don't make mistakes when capturing Yuffie. Or don't catch it at all. You'll catch it later
dates.
22.On the cargo ship, talk to Yuffie, but refuse to give her the Tranquilizer.
Aerith say “I dunno...”, Tifa “I don't know”.
23.In Gold Saucer, take Red XIII with you.
24.In Corel Prison, when going in search of Dean, make up a squad like this: Cloud,
Barret and Red XIII (or Cait Sith)
25.In Gongaga, take Tifa and Aerith with you, talk to Zach's parents
and leave the city without speaking to Tifa or Aerith.
26.Don't do the subquest in Wutai. Do it after the date.
