How to unlock the Ruby Render achievement in FINAL FANTASY VII - Definitive Guide
There are many ways to defeat Ruby Weapon and many are very time consuming.
I highly recommend to use the "cheats" in the game. And defeat Emerald weapon first because you have to do this anyway for an achievement.
First defeat Emerald Weapon to obtain the Master Summon Materia (all summons in one materia)
I used a team with Barret, Cid and Cloud all with level 4 Limit brakes.
Barrets 4th limit can you get in Old Corel after the train sequence later in the game.
Cids 4th limit can you get in the sunken Gelnika ship also later in the game.
Clouds 4th limit can be super time consuming. You have to battle in the battle square inside the Gold Saucer "on disc 3" and get 32.000 battle points to buy his limit. And here is the point what makes this also time consuming. You need 10GP (Gold Saucer points) to battle. For each battle you can get around 3000-10.000 Battle Points. And if fail a battle for this fight you get 0. There are many ways to obtain GP. The Easiest is to "buy" them. Sometimes there is a guy on this spot at the Gold Saucer. If not just leave and come back again. Here you can buy up to 100GP with 10.000Gil. I highly recommend to rack up 1000GP for 100 battles.
After you have enough GP you can go battle. The battle mechanics are more ore minor complex but what we do we use the "cheats". I used any weapon and any armor (no big differences) but what i recommend is a Ribbon as an accessory.
Up to this point you can have up to two ribbons.
One in the Temple of the Ancients: You reach a room with a giant Clock. Leave the Clock at 5 there is the ribbon.
The second one is in Gaea's Cliff: Here is a video for this ribbon
Sadly both are missable. If you miss both Ribbons you can Morph Master Tonberry in the Northern Crater into Ribbons.
In the battle square you have to fight up to 8 enemies. For each consecutive win you get more BP (battle points). The more the higher ( ). From round 3000 up to 10.000. That means 4 to 11 battles if you never lose.
But here is what it makes time consuming. After every battle you have a slot mechanik with a debuff. Broken Weapon, Broken Armor, Broken Accessory, Broken Materia of any or all colors, Lvl Down, HP/MP Down and so on. If your accessory is broken its often, without better gear and Materia, impossible to win. Just play again and again up to you 32.000 Battle points.
Buy the Omnislash by the mashines at the entrance and like all other characters finish all other Limits and use the item to obtain Clouds The Slash to end all Slashes Achievement.
After all this preparations, buy some HP+ Materia, but a maximum of 6 Materia in total for each character, in Cosmo Canion, to get 9999HP on each character. Also reach level 75+ in the north crater. See this solution.

After the battle you obtain the Emerald Eviscerator Achievement
and the Earth Harp item. This can be traded in Kalm to one Master Materia of all three types, Command, Magic and Summon.
Now take Cloud or what ever you are most comfortable with and defeat Rubi Weapon. He will be found in the Gold Saucer dessert on the World Map. Enable Unlimited Regeneration cheat and have also the HP up to 9999 with the HP+ Materia from the Emerald fight. Also make use of a Materia combination with Ultima or Comet Materia in a "Combo Slot/Dual Slot" with "Element" Materia and hold the Master Summon Materia. Have a Ribbon in you accessory slot.
At the beginning wait until Rubi "removes" 2 characters from the battle. Reload the save up to the point your character with the Master Materia stays in battle.
You can also make sure the Character with the Master Materia doesn't get removed by starting the Battle with the other 2 Characters dead. Make sure you don't have Cheats on when you start the Battle or else they will be revived, once in Battle you can reactivate the cheat. (Cheers to ErnaP)
Now spam the Knights of the Round Summon on Rubi till he is dead. From time to time he spawns his claws. Kill them with a Knights of the Round as fast as possible!.
If you like you can buy the W-Summon Materia for 64.000BP in the Gold Saucer. This grants you the W-Summon (Double Summon) ability. It allows to summon another summon direkt after your first. You can then just double Summon Knights of the Round. If you summon Knights of the Round at first and as your second summon Hades there comes a handy effect that stops Rubi to cast his Ultima counter attack.
There are many many other good ways and strategies to finish this Super Boss. But nearly all of them are a lot more time consuming than the strategy in this guide.
After the fight you obtain the Desert Rose item. This can be traded to a Gold Chocobo in Kalm. With the Gold Chocobo you can get the Knights of the Round Summon Materia for this achievement.
Make sure you have HP Plus materia on Cloud so his HP is 9999, a Ribbon and Omnislash (level 4 limit break from the Gold Saucer). Cloud was at lvl 71 when I did this but he can be lower lvl, it will just take a little longer if so. Use whatever weapon and armor you want, higher damage is obviously better.
Turn off battle enhancement and fight a random battle before you fight Ruby weapon and kill your other 2 party members.
Enter the battle with Ruby weapon (with battle enhancement still off to prevent reviving your party members) and wait until he attacks once. After his attack, turn on battle enhancement and just keep using Omnislash. With 9999 hp the tentacles can't kill you nor any of his attacks. It took about 30 minutes of using Omnislash before he died.
I had one character weild a Throw materia that could use Coin (gave it to Yuffie but doesn't matter really) and levelled them up a fair bit before trying. I got her to 69 (NOT intentional, was just when I got bored of grinding) and equipped her with Mystile and Ribbon. Weapon doesn't matter but it was Conformer. I gave her enough HP Plus to get to 9999 HP (took 2 Mastered ones) and a Counter Attack just to speed up the process ever so slightly. Completed the 99,999,999 Gil achievement first and just threw it all at Ruby Weapon XD
Each Coin use dealt 9999 damage for 600,000 Gil. None of Ruby Weapons attacks could kill me (I used Reflect to deal with Shadow Flare but I'm certain it would've been fine) and I kept the booster on to keep myself healed. His tentacles got pretty close but I believe they do Gravity damage so no biggie. If you want to be safe just grind to 99 first for the other achievement. The only tricky part was waiting for a battle where Yuffie was the character left after the two Whirlisands.
After that just put on a video or some background music and have at it
Actually I saw this solution too late; I tried to spam Omnislash on Ruby but it would only inflict 0 damage each time (forgot about his tentacles). So I just spammed Knights of the Round instead with the Battle Boosters turned on. You don't even need to breed a Gold Chocobo to complete this game! Just spam Omnislash on Emerald Weapon and at Kalm the Traveler will trade you the Master Summon Materia which contains Knights of the Round itself for defeating Ruby. Beating Ruby gets you a Gold Chocobo. It's much easier than going through the tedious process of breeding one so might as well use your money and chuck it at Ruby if the option is there!

NOTE 1: You only need Cloud for this
NOTE 2: This is NOT the fastest way to kill Ruby / Emerald Weapon but I do believe it's probably the easiest (and definitely the safest). With the materia combo below you can't really fail.
You will need the following Materia:
Final Attack - Mastered (x3)
Knights of the Round - Mastered (x2)
Revive - Level 1
HP Plus - Mastered
HP <-> MP - Mastered
To obtain the above materia you will need:
Gold Chocobo - This will be able to get you Knights of the Round and HP <-> MP together
Ultima Weapon, Omnislash for Cloud, and W-Summon - Unlocking these items for Cloud will unlock the "Special Stage" in the Battle Arena at the Gold Saucer. Win that for the Final Attack Materia
Revive you can purchase in Junon,
HP Plus can be purchased in Cosmo Canyon (after you reach Mideel), if you miss the one from Rufus' send off in Junon during the story.
Once you have mastered the required materia:

Final Attack + Knights on the Round
Start the battle, and then go make a cup of tea or something, when you come back Ruby / Emerald Weapon will be dead.
This works because:
HP Plus ensures your HP will be 9999, then swaps HP for MP so you have 999 HP and 9999 MP.
Ruby kills you every time it does damage, which triggers Final Attack to revive you, and then cast KotR twice... each and every time you die.
link hp absorb with mime and mp absorb with either KOTR, hades or master summon
Get w-summon from the battle arena
equip these 2 materia on 1 character and kill the other 2 off
enter the battle near the gold saucer(in the quicksand)
Once it puts it's hands in the ground, revive both teammates and then do w-summon hades and KOTR, followed by mime with that character
repeat until it dies
One character has materia equips as following -
w-summon, magic plus (mastered), knights of round (linked with) HP absorb, Counter (the support materia, not the purple one - mastered and linked with) Mime, Final Attack (linked with Phoenix). Opt for HP plus as well and maybe Hades if you're using safe starts.
The other two characters should be dead before starting the fight, otherwise you won't be able to do damage to Ruby - both of theme should have the following setup:
counter (linked with) mime, magic plus... that's all. (Opt for HP plus if needed)
When the fight starts Ruby will burrow his hands thus making him vunerable (he will only do this if there's only one player alive and active) use Phoenix to revive your team. Then use w--summon with Knights of round twice. Then mime for all the other actions. This is somewhat risky since Ruby will counter your summons with Ultima so make sure you can endure. A safer but slower method is to use Knights of Round and Hades in your w-summon. Ruby can be paralysed by Hades causing him to not counter your summons with Ultima. Also use Ribbons since his tentacles can cast frog and/or other scary status-defects on you.

Grinding should be done in the norther crater in the area with the water. You'll be looking for magic pots that you need to use the item Elixir on to be able to kill and Movers (orange balls in group of three). Theses enemies gives tons of AP - Use Apocalypse-sword with Cloud (found in Ancient Forrest, has 3 slots with tripple Materia growth) and Javelin for Cid (can't remember where it's found right now - but it has 5 slots and double growth)
To obtain this trophy, you must defeat the Ruby Weapon superboss. In order for Ruby Weapon to appear, you must first defeat Ultimate Weapon. Ruby Weapon can then be found and fought in the sand around the Gold Saucer by approaching it in the Highwind or using a Chocobo.
Defeating Ruby Weapon is no easy feat. It boasts an impressive 800,000 HP, very powerful attacks, high defenses, can inflict status ailments, and has the ability to permanently expel characters from the battle. A lot of preparation is needed in order to beat this beast, but there are ways to easily cheese it and win relatively stress-free. In order to do so, you will need the W-Summon Materia from the Battle Square in the Gold Saucer, the Knights of the Round Materia, the Hades Materia or many Dazers items (can be duplicated with the W-Item duplication glitch), the Mime Materia, and the W-Item Materia.
Ruby Weapon will be immune to damage until its two tentacles emerge from the sand. To get them to emerge, you must only have one living party member remaining. Thus, it’s recommended to enter the battle with two dead characters, and have the third cast Life2 linked to an All Materia. Ruby Weapon uses fire-based attacks and status ailments, so it is advised to equip everyone with Fire Armlets (stolen from the Unknown enemy in the Sunken Gelnika) to drain fire attacks, and Ribbons to nullify status ailments. Further, Ruby Weapon's physical defense is very high. Consider using four Hero Drinks on your characters if you want to use their Limit Breaks on Ruby Weapon.
Ruby Weapon has one major weakness, which is that it’s vulnerable to the Paralyze status ailment. Therefore, you want to make sure it’s paralyzed as often as possible. There are two ways to go about this. The first way is to summon both Knights of the Round first, then Hades using W-Summon. Use Mime afterwards to pile on the damage. Alternatively, you can use Dazers against Ruby Weapon to also paralyze it. Use Megalixirs to heal. You can also use W-Item to use both a Megalixir and a Dazer to heal your party and paralyze Ruby Weapon. Having the Phoenix Materia linked with the Final Attack Materia will also bring that character back to life once wiped out. The higher the Final Attack Materia’s level, the more often the character will be revived. Once Ruby Weapon is paralyzed, use your strongest attacks to deal as much damage as possible, and be sure to paralyze it anew every turn.
Alternatively, you can enable God Mode and punish Ruby Weapon with your most powerful Limit Breaks and win this battle with ease.
Side note on cheapest way to kill him use mimic.
Ruby Weapon is an optional boss found randomly outside of Gold Saucer on the world map, and the toughest encounter of the game. It appears as a big red monster that you can run into with the airship, and only shows up after defeating Diamond Weapon during the story (Page 37 of the Jegged Walkthrough).

Kill 2 party members.
Equip the remaining member with:
KotR (Any Level) <-> HP Absorb (Any Level)
Mime (Any Level) <-> Counter (Mastered)
W-Summon (Optional)
A couple of HP Plus materia
Then:
Engage Ruby.
Wait for tentacle plant.
Cast KotR.
AFK
After you cast KotR, Ruby will counterattack with Ultima. Then you will counter with Mime, recasting KotR. Then Ruby will counterattack with Ultima. You’ll counter with Mime. Each time, KotR will fully heal you with HP Absorb.
About 20 minutes later, Ruby WEAPON will be dead and you will have cast KotR between 8 and 12 times, depending on how much damage each cast does.
