This is story related and cannot be missed. You will fight Zalamander in the Thunder Plains before Yuna's concert in Chapter 4. A red marker on the map will direct you to the boss after a cutscene when you arrive in the Thunder Plains. The boss fight is pretty easy and straightforward. I was able to very easily defeat him using an alchemist, a berserker, and a dark knight.

You can also beat it in the Arena much earlier (I did it in Chapter 3 in the Grand Cup: Hard, but you can unlock this cup already in Chapter 1)
